Preparation method Oolong tea

Oolong tea is a semi-oxidized type of tea that you can brew multiple times. With each subsequent brewing of the leaves the taste profile and colour changes revealing subtler volatiles, giving them the opportunity to engage your senses. Make sure not to use too much tea.

Step 1: before you brew the tea

  • Oolong tea is best brewed in a Chinese teapot, jug, tea egg or tea bag. The leaves must have space to unfold.

  • Oolong tea is brewed with boiled water between 90 - 95 degrees. Preheat the teapot with hot water.

Step 2: the first brewing

  • Place the tea in the pot and optionally rinse it with hot water for up to 3 seconds.
  • Pour the boiled water into the teapot and brew the tea as long as indicated on the right.

  • Pour the tea into cups or a jug. Do not leave the leaves in the water between settings.

Step 3: brew the tea up to five times

  • After the second brewing, each subsequent brewing requires 5 seconds more.

  • The colour, smell and taste changs per brewing.

  • It is best not to take too much time between brewings.

No. 1 Dong Ding Oolong

Amount: cover the bottom of the pot.

Setting: 50 seconds, from the second brewing 30 seconds + 5 seconds with each subsequent brewing.

No. 2 Oriental Beauty Oolong

Hoeveelheid: een derde van de theepot.

Zetting: 50 seconden, vanaf de tweede zetting 30 seconden + 5 seconden per zetting.

No. 3 High Mountain Oolong

Hoeveelheid: bedek de bodem van de pot.

Zetting: 50 seconden, vanaf de tweede zetting 30 seconden + 5 seconden per zetting.

No. 4 Pouchong Oolong

Hoeveelheid: een derde van de pot of kan.

Zetting: 20 seconden, vanaf de tweede zetting 40 seconden + 5 seconden per zetting.
